Ingredients

Adobo Fried Rice

  • 6 cups rice (preferably day-old rice)

  • 6 cloves garlic minced

  • 4 tbsp soy sauce

  • 4 tbsp vinegar

  • 2 tbsp vegetable oil

Directions

  1. Heat a large skillet or wok over medium heat and add the vegetable oil. Allow the oil to heat up for a minute or two.

  2. Add the minced garlic to the skillet and sauté it until it becomes fragrant and lightly golden. Stir constantly to prevent it from burning.

  3. Once the garlic is golden, add the cooked rice to the skillet. Break up any clumps of rice with a spatula or fork and stir-fry it with the garlic for a couple of minutes.

  4. Add the soy sauce and the vinegar to the edge of the skillet and and continue stir-frying, ensuring that the rice is evenly coated with the sauce. Adjust the amount of soy sauce and vinegar according to your taste preferences.

  5. Stir-fry the rice for about 5-7 minutes, or until it is heated through and starts to develop a slightly crispy texture. Make sure to stir frequently to prevent the rice from sticking to the pan.

  6. Taste the fried rice and adjust the seasoning if needed. You can add more soy sauce or vinegar according to your preference.

Once the rice is cooked to your liking, remove the skillet from the heat and transfer the Adobo Fried Rice to a serving dish.

Adobo Fried Rice is delicious on its own, but you can also serve it as a side dish with grilled or roasted meats, seafood, or vegetables.
