Mother's Day Celebration: Fostering Filipino Flavors with Mahal's Kitchen

This Mother's Day I wanted to celebrate my friend Donna and her family. She and her daughter, Brittany selflessly fostered and adopted 7 siblings. Since they live in the northeast part of town, I thought to try Mahal's Kitchen to share Filipino culture and food.

I ordered lumpia, pancit/noodles, pork BBQ stick, honey BBQ wings, and fruit salad. All the staples for a Filipino gathering were brought to my friends. I felt the taste of home when I took a bite of the aromatic pancit and a spoonful of fruit salad. 

The flavorful pancit were long noodles topped with string beans and cabbage. The citrus squeezed from the lemon gave it the perfect taste! It took me back to birthdays celebrated in the Philippines. Sarap! 

It's been a very long time since I've had fruit salad, so I was seriously looking forward to the familiar taste. I hadn't realized that the simplest recipe version of the fruit salad is with a handful of ingredients: fruit cocktail, sweet condensed milk, all-purpose cream, and coconut strips. This is what Mahal's Kitchen's version was. The fruit salad tasted just the way I remembered it. My favorite parts are the coconut strips and the cherries! During my childhood and when I was in Manila working, I remembered fruit salad as an all-year-round dessert. 

Mahal's Kitchen did great with its catering. Everyone enjoyed the food so much that they plan to visit the restaurant! Salamat for a delicious Mother's Day lunch. I even got to take home some extra fruit salad!
