Delicious Chicken Longganisa Smashburger Recipe: A Filipino-American Fusion

Experience a unique twist on traditional Filipino longganisa with this Chicken Longganisa Smashburger recipe. Combining the rich flavors of longganisa with the popular Smashburger cooking style, this dish offers a delightful fusion of cultures. Perfectly seasoned chicken patties are smashed on a griddle to create a crispy, flavorful delight that pairs beautifully with garlic fried rice and a fried egg, also known as longsilog.

Gear You Need:

  • Meat grinder

  • Meat thermometer

  • Griddle (electric or cast iron)

  • Infrared thermometer (optional)

Ingredients:

  • 4 lbs chicken thighs, deboned, but skin intact

  • 1.25 cups brown sugar

  • 4 tablespoons smoked paprika

  • 2 tablespoons salt

  • 2 tablespoons black pepper

  • 6 tablespoons soy sauce

  • 4 teaspoons garlic powder

  • 6 tablespoons corn starch

  • 1.25 cups water

Directions:

  1. Prepare the Chicken: Cut the chicken thighs into 1-inch cubes. Place the meat and the metal parts of the grinder (plates, knife, head, auger, and tray) in the freezer for 2 hours to ensure a clean grind.

  2. Grind and Mix: Grind the chilled chicken and place it in a non-reactive bowl. In a separate bowl, mix together the brown sugar, smoked paprika, salt, black pepper, soy sauce, garlic powder, corn starch, and water. Combine this mixture with the ground chicken, ensuring even distribution of flavors.

  3. Marinate: Cover the bowl and refrigerate the mixture overnight to allow the flavors to meld and develop.

  4. Heat the Griddle: Preheat your griddle to 350°F and coat it with nonstick spray to prevent sticking.

  5. Form and Smash the Patties: Using an ice cream scoop, place scoops of the chicken mixture onto the griddle. Use a spatula to smash each scoop into a flat patty, mimicking the Smashburger style.

  6. Cook to Perfection: Flip the patties once the edges are crispy and golden. Continue cooking until the internal temperature reaches 180°F, ensuring the chicken is fully cooked.

Serve and Enjoy: Pair your Chicken Longganisa Smashburgers with garlic fried rice and a fried egg for a complete longsilog experience. This fusion dish is sure to impress with its blend of sweet, savory, and smoky flavors.
