Bibingka Pancakes: A Modern Take on a Filipino Classic
Enjoy the festive flavors of traditional Filipino bibingka in a new form with these easy-to-make Bibingka Pancakes. This recipe uses White King Bibingka mix for a quick and authentic taste, perfect for a special breakfast or brunch.
Ingredients:
- 250g White King Bibingka mix
- 3/4 cup water
- 1/2 cup sugar
- 4 tbsp melted butter
- 3 eggs, beaten
- A pinch of salt
- Optional toppings: Sliced cheese, salted duck eggs
Instructions:
In a large bowl, whisk together the Bibingka mix, water, sugar, melted butter, beaten eggs, and a pinch of salt until smooth.
Heat a non-stick pan over medium heat and lightly coat with cooking spray.
Pour 1/4 cup of batter into the pan, spreading it to even thickness.
Cook for 1 to 1.5 minutes, until edges set and bubbles appear on the surface. Flip and cook the other side for about 30 seconds, until golden brown.
Transfer the pancake to a plate. Optionally, top with a slice of cheese and a piece of salted duck egg while hot.
Repeat with the remaining batter, stacking pancakes on a plate.
Serve warm, optionally with coconut syrup or honey, and a sprinkle of grated coconut.
